Equal quantity cake

Well, I'm no baker. In fact I've always thought of baking as a tiresome job and never really bothered with it. I have never baked anything in my life.....willingly. When I was studying hotel management, almost all the people I knew loved the bakery class, except me. Well not much has changed since college except now I am a mum, and I want to dish out baked goodies for my sonny in a couple of years.

As I've mentioned in a previous post, my MIL is an excellent cook and she helped me in my first baking lesson. (Obviously in college I had to bake to pass, didn't too much attention to instructions then, but I won't dwell on that.) Since this was my first effort at baking a cake willingly, we decided we should try something simple. This recipe is the first one I tried and my mother (in-law) gave me the instructions. I am happy to report that the final product was so good that I have decided to bake every week. As the name suggests all main ingredients are in equal quantities, and hence extremely easy to remember.

Ingredients:

Refined flour - 100 gms
Butter - 100 gms
Sugar - 100 gms
Eggs - 100 gms ( 2 nos) I weighed the eggs too !
Vanilla essence - 1 tsp
Baking powder - 1 tsp

Method:

1) Mix the baking powder with the flour and sieve it thrice. This is done so the flour is aired.
2) Beat the sugar and butter. When the sugar is mixed well with the butter add the eggs and vanilla essence. Continue beating.
3) Fold the flour in.
4) Grease the baking tin with butter and then dust with flour. Pour the batter. Lift the tin and slightly hit it on the kitchen table for the air bubbles to be released.
5) Pre-heat the oven to 180 degrees. Bake in the oven at 180 degrees for 20 mins.
6) Check if done by inserting a tooth-pick, and if it comes out clean, the cakes done.
7) Wait for the cake to cool before you attempt to remove it from the baking dish.
8) Cut it into pieces and serve it with tea.
