Colorful Chicken Salad

Salads are healthy and nutritious and that is no rocket science. It is one of the easiest things to make in the kitchen and yet most people I know, including myself, would give reams of excuses for not making it a part of our regular diet. I have of late started keeping close tabs on what I eat everyday, this is a part of my lose weight mission. And one of the things I immediately started doing is eating a salad for atleast one meal everyday.

I'm proud to say that I love this meal the most and I feel super light even after polishing off the entire bowl. The recipe I share with you today can be made in 15 minutes flat and is delicious and low on calories. You will enjoy your salad best if all your veggies, in this case, are fresh.

Ingredients:
  1. Iceberg lettuce - 2 leaves (Optional - You may soak in ice water for atleast 15 minutesto retain freshness before mixing all ingredients.)
  2. Cucumber - 1 large, diced in cubes
  3. Tomatoes - 1 large, deseeded and cubed
  4. Red, Yellow & Green pepper - 1 each, medium, deseeded and cubed                                     (You may either choose one or add all three, its optional)
  5. Boneless Chicken - 1 cup cooked and shredded/ cubed
  6. Salt & Pepper - To taste
  7. Honey Mustard Sauce - 2 - 3 tbsp
Method:
  1. In a salad bowl, tear the lettuce leaves into bite sized pieces and add all veggies.
  2. Next add the seasoning and the sauce.
  3. Use two large spoons to mix the ingredients well.
  4. Your cucumber chicken salad is ready to be served.
Note: Add the seasoning and sauce just before serving.
