Eggplants are very popular and easily available in the Philippines. I love this vegetable, and try and cook it at least once a week, even though I am the only one who eats it at home. Today's recipe is quite simple and I cook it very often. If your an eggplant fan,like me, you should give it a go.

Alternately, you could marinate the egg plant in all the mentioned ingredients and grill till done.
You could also add half a tablespoon of soy sauce to add Asian flavor.
Ingredients:
- Eggplant - 200 gms
- Garlic - 3 fat cloves
- Salt and pepper - as needed
- Oil - as needed
Method
- Wash and cut the eggplant into three inch pieces (lengthwise)
- Finely chop garlic.
- Heat oil in a pan, add the garlic and fry for a minute.
- Add the eggplant, salt and pepper. Stir fry for a minute and then cook on slow flame for six to seven minutes.
